Warming Winter Lunch | Blogtober

It's cool autumnal weather now and for most of us we will have swapped our fresh salads for something more warming for lunch, if you're anything like me you don't want to be going out buying pre prepared food everyday for lunch because not only is it expensive but it means you have less control over the ingredients that go onto your body.

Lentil Soup

The below recipe will yield quite a few servings (depending on how hungry you are obviously ) so you can decant it into pots and refrigerate and you should be set for a few days with minimal effort.

This soup is really rich and warming but contains no added oil and is nice and healthy and full of fibre so makes a perfect speedy lunch that will leave you feeling guilt free. I usually take a couple of organic brown rice cakes to dip in my soup as well.

Lentil Soup

1 cup of red lentils
2 cups of chopped white onion ( I buy frozen chopped onions for convinience and to save my eyeballs)
1/2 teaspoon chilli flakes
1 tablespoon smoked paprika
1 tablespoon dried basil
2 vegetable stock cubes
1 medium white potato
3 tablespoons of tomato paste
1.5 litres of water


Using a heavy based saucepan, put a splash of water in the bottom and "fry" off the onion on a medium heat, chop the potato into small chunks and add to the saucepan, adding a splash more water if needed. Add the smoked paprika, basil and chilli flakes, then stir in the tomato paste. Boil the water, add the stock cubes to the saucepan and add the boiling water then continue to boil for 10 mins, add in the lentils and boil for a further 5 mins and check the potato cubes with a sharpe knife. If the potato and lentils are soft it's time to take it off of the heat and blend with a stick blender.

You can add more water if the consistency is too thick for you, I like thick soup but it's not for everyone. Add salt and pepper to taste.

I find this provides me 4/5 healthy sized portions and is really filling. I hope you enjoy this recipe and you feel inspired to create some healthy winter lunches!
