When you have sat all snuggly in your bed for as long as you can bare before your stomach thinks your throats been cut and you have to get something to eat, then and only then do you venture out of your bed shaped kingdom and cook something tasty and good for your soul.
Baked eggs come in lots of forms and you can add almost anything you like, this one is very simple. I mixed together a couple of spoons of chopped tinned tomatoes with some smoked paprika, a little dash of chili powder and some basil, I used some oil spray to grease a little ramekin and then put the tomato mix in the bottom and cracked an egg on top. The potato waffles take 15 mins in the oven and after about 8 I put the egg into the oven as well to bake and cooked the bacon in a pan. Couldn't be easier, add a sprinkle of parmesan on the egg if you wish and a splash of maple syrup on the bacon and waffles and voila, brunch is served.
